Spicy Honey Glazed Wings

Honey is great on wings, pizza, biscuits and, as you might expect, biscuits. The hot honey that we use for these wings goes beyond the sweet and spicy flavors with the additions of lime and chili crisp. This is the perfect topping for these low-fuss, crispy grilled wings. Preparation is key. It may seem controversial to cook wings in the oven for a long time before grilling, but it is important. This will allow the fat in the wings in the wings render and not drip into the grill causing flare-ups. Bonus: You can prepare these wings in advance. (You’re welcome!) Ingredients
Serves 4 to 6

Tbsp. Bird chile powder (or cayenne pepper)

1

Tbsp. Diamond Crystal or 1 3/4 Tbsp. Morton kosher Salt

1

Tbsp. Freshly ground black pepper

lb. chicken wings, patted dry

2

Limes, divided

1/2

cup honey

1

Tbsp. fish sauce

3

Tbsp. Chili crisp plus more for serving

1

cup shishito peppers (about 8 oz.)

Red Thai chiles (or jalapenos) thinly sliced

Cup cilantro leaves with tender stems

1/4

Salted Dry-Roasted Peanuts, coarsely chopped

Preparation
Step 1
Mix 1 Tbsp. of black pepper, chile powder and salt in a small bowl. Mix the black pepper and chile powder in a small dish until combined.

Step 2
Spread the chicken wings out in one layer on a baking sheet with a rim of foil. Rub the spice mixture all over and allow to sit at room temp for at least 15 mins. You can also cover and chill it up to a day. Let the spice mixture sit at room temp for 1 hour if you are chilling.

Step 3
Pre-heat oven to 375 degrees. Bake wings for 30-40 minutes, until they are slightly golden. Remove wings from the oven and let them cool down.

Step 4
Slice one lime in half, squeeze the juice, and add it to a large bowl. Add honey, fish sauce and 3 Tbsp. Chili crisp. Honey glaze chicken wings.

Step 5
Grill on medium heat. Grill the chicken wings, and shishitos peppers. Turning them occasionally, grill until they are golden brown with charred spots.

Step 6
Add the chicken wings, shishito, and cilantro to a serving platter. Drizzle more chili crisp on top. Slice the remaining limes into wedges, and serve the wings and peppers along with lime wedges to squeeze over.
